Easter Egg Rice Krispie Treats

Ingredients
  

  • 3 tablespoons unsalted butter
  • 1 package 10 oz mini marshmallows
  • 6 cups Rice Krispies cereal
  • ½ cup pastel sprinkles plus extra for decoration!
  • Non-stick cooking spray for shaping

Instructions
 

Step 1: Melt the Butter & Marshmallows

  • In a large pot, melt the butter over low heat.
  • Add the mini marshmallows, stirring continuously until they are fully melted and smooth.
  • Remove from heat.

Step 2: Mix in the Cereal & Sprinkles

  • Stir in the Rice Krispies cereal until evenly coated with the melted marshmallow mixture.
  • Gently fold in pastel sprinkles, being careful not to overmix so the colors don’t bleed.

Step 3: Shape into Easter Eggs

  • Lightly coat your hands with non-stick cooking spray to prevent sticking.
  • Scoop about ¼ cup of the mixture and shape it into an egg shape with your hands.
  • Place the shaped eggs onto a parchment-lined baking tray.

Step 4: Decorate & Set

  • Press extra pastel sprinkles onto each egg while still slightly warm.
  • Let the treats cool and set for 15-20 minutes before serving.

Notes

  1. Use Plastic Easter Egg Molds – Press the mixture into lightly greased plastic eggs for perfectly shaped treats.
  2. Add Food Coloring – Stir in a few drops of pastel food coloring to the melted marshmallow mixture before adding cereal for colored eggs.
  3. Make Chocolate-Dipped Eggs – Dip the bottom half of each egg in melted white or milk chocolate for a sweet finishing touch.
  4. Use Different Cereal – Try Fruity Pebbles, Cocoa Krispies, or Cheerios for unique variations.
  5. Don’t Overmix the Sprinkles – Fold them in gently to keep their bright colors from running.
