Ingredients

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup pastel chocolate eggs like Cadbury Mini Eggs
  • Extra pastel sprinkles optional, for decoration

Instructions

Step 1: Prepare the Pan

  • 1️⃣ Line a 9x13-inch baking dish with parchment paper and lightly grease with butter or non-stick spray. This makes it easier to remove and slice the bars later.

Step 2: Make the Marshmallow Mixture

  • 2️⃣ In a large saucepan, melt the butter over low heat, stirring occasionally.
  • 3️⃣ Add the mini marshmallows and stir constantly until fully melted and smooth.
  • 4️⃣ Stir in vanilla extract for extra flavor.

Step 3: Combine & Press

  • 5️⃣ Remove the saucepan from heat and immediately stir in the Rice Krispies cereal. Mix quickly until all the cereal is coated in the gooey marshmallow mixture.
  • 6️⃣ Gently fold in half of the pastel chocolate eggs so they are evenly distributed throughout.
  • 7️⃣ Transfer the mixture into the prepared baking pan and use a greased spatula (or your hands with parchment paper) to press it down evenly.

Step 4: Decorate & Set

  • 8️⃣ While the mixture is still warm, press the remaining chocolate eggs and pastel sprinkles on top for a festive look.
  • 9️⃣ Allow the bars to cool and set at room temperature for at least 1 hour before slicing.

Step 5: Slice & Serve!

  • 🔟 Once set, remove from the pan and cut into squares. Serve and enjoy these chewy, marshmallowy, chocolatey treats!

Notes

  1. Don’t Overheat the Marshmallows! – Low heat is key to keeping the bars soft and chewy rather than hard.
  2. Use Fresh Marshmallows – Stale marshmallows won’t melt properly and will affect the texture.
  3. For Extra Chocolate Goodness – Drizzle melted white or milk chocolate over the bars before slicing!
  4. Want a Fruity Twist? – Add freeze-dried strawberries or a handful of fruity cereal for an Easter rainbow effect!
  5. Make Shaped Treats! – Instead of slicing into squares, use cookie cutters to make bunny or egg-shaped treats.
