Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 can 20 oz crushed pineapple, undrained
  • ½ cup shredded coconut optional, for extra tropical flavor

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Prepare the Cake Batter

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt.

Step 2: Mix Wet Ingredients

  • Add the vanilla extract, eggs, and undrained crushed pineapple to the dry ingredients. Stir until well combined. If using, fold in the shredded coconut for an extra tropical touch.

Step 3: Bake the Cake

  • Pour the batter into a greased 9x13-inch baking dish and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.

Step 4: Prepare the Cream Cheese Frosting

  • In a separate bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Step 5: Frost the Cake

  • Once the cake is completely cool, spread the cream cheese frosting evenly over the top. Garnish with extra shredded coconut if desired.

Notes

  • Drain Pineapple Well: For a firmer texture, drain some of the pineapple juice, but leave enough for moisture.
