Ingredients
For the Crust:

crushed graham crackers
or digestive biscuits, vanilla wafers, or shortbread cookies!

unsalted butter
melted
For the Marshmallow Filling:

cream cheese
softened

powdered sugar

teaspoon
vanilla extract

heavy whipping cream

mini rainbow marshmallows

white chocolate chips
optional, but adds extra sweetness!
Instructions
Step 1: Prepare the Crust
In a medium bowl, mix together crushed graham crackers and melted butter until fully combined.
Press the mixture firmly into the bottom of a lined 8x8-inch baking dish.
Chill in the refrigerator for 10 minutes while you prepare the filling.
Step 2: Make the Filling
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Step 3: Assemble the Slice
Fold in mini marshmallows and white chocolate chips (if using).
Spread the marshmallow mixture evenly over the chilled crust, smoothing out the top with a spatula.
Sprinkle extra mini marshmallows on top for decoration.
Step 4: Chill & Serve
Cover and refrigerate for at least 4 hours (or overnight) until firm.
Slice into 12 squares and serve chilled. Enjoy!
Notes
Toast the Marshmallows for a Gooey Twist
– Use a kitchen torch or broil the top for 30 seconds for a slightly toasted marshmallow flavor!

– Use gluten-free graham crackers or digestive biscuits.
