Ingredients
  

  • 1 unbaked 9-inch pie crust store-bought or homemade
  • 3 large eggs room temperature
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg plus extra for sprinkling

Instructions
 

  • Preheat the oven: Preheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish and crimp the edges as desired.
  • Whisk the filling: In a large mixing bowl, whisk together the eggs, sugar, and salt until well combined and slightly frothy.
  • Add the milk and flavoring: Slowly pour in the milk while whisking continuously. Add the vanilla extract and ¼ teaspoon of nutmeg, stirring until smooth.
  • Pour the custard into the crust: Carefully pour the custard mixture into the prepared pie crust.
  • Bake the pie: Place the pie on a baking sheet to catch any spills, then bake in the preheated oven for 45-50 minutes, or until the custard is set but still slightly jiggly in the center.
  • Cool and sprinkle with nutmeg: Remove the pie from the oven and let it cool on a wire rack. Sprinkle the top with extra nutmeg for a beautiful finish.
  • Chill or serve warm: You can serve the pie slightly warm or chill it in the refrigerator for a few hours before slicing.

Notes

  • For a richer custard, use half-and-half or a mix of heavy cream and whole milk.
  • Shield the crust edges with aluminum foil if they start to brown too quickly.
