Ingredients
  

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil, optional for a smoother coating

Instructions
 

Step 1: Make the Peanut Butter Mixture

  • In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Gradually add the powdered sugar, mixing until a thick, dough-like consistency forms.

Step 2: Shape the Peanut Butter Balls

  • Scoop tablespoon-sized portions of the peanut butter mixture and roll them into balls. Place the balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.

Step 3: Melt the Chocolate

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and melted.

Step 4: Coat the Peanut Butter Balls

  • Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, coating it fully. Return each coated ball to the parchment-lined baking sheet.

Step 5: Chill and Serve

  • Refrigerate the chocolate-coated peanut butter balls for another 15 minutes, or until the chocolate is set. Serve these delicious treats chilled, and enjoy every creamy, chocolatey bite!

Notes

  • Smooth Coating: Adding coconut oil to the chocolate makes it smoother and easier to coat, but it’s optional.
