Ingredients
  

  • 1 ½ cups crushed pineapple well-drained
  • 2 cups finely crushed graham cracker crumbs
  • 1 cup sweetened shredded coconut plus extra for rolling
  • ½ cup powdered sugar
  • ½ teaspoon almond extract optional, for extra flavor

Step 1: Prepare the Mixture

  • In a large mixing bowl, combine the well-drained crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract, if using. Mix well until all ingredients are fully incorporated.

Step 2: Shape the Balls

  • Take small portions of the mixture and roll them into 1-inch balls. Roll each ball in extra shredded coconut to coat, pressing gently to help the coconut stick.

Step 3: Chill

  • Place the prepared balls on a baking sheet or plate lined with parchment paper. Refrigerate for at least 1 hour to allow them to firm up before serving.
