Ingredients
  

For the Cake Base:

  • 1 box strawberry cake mix plus ingredients listed on the box

For the Cream Cheese Swirl:

  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Strawberry Glaze:

  • 1 cup fresh strawberries mashed
  • cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

For Garnish (Optional):

  • Fresh strawberries
  • Drizzle of white chocolate

Instructions
 

Prepare the Cake Base:

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Prepare the strawberry cake batter according to the package instructions.
  • Pour the batter into the prepared baking dish, spreading it out evenly.

Make the Cream Cheese Swirl:

  • In a medium mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Drop spoonfuls of the cream cheese mixture over the cake batter.
  • Use a knife to gently swirl the cream cheese into the batter, creating a marbled effect.

Bake the Cake:

  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the pan.

Prepare the Strawberry Glaze:

  • In a small saucepan, combine the mashed strawberries, granulated sugar, and lemon juice.
  • Cook over medium heat until the mixture begins to bubble, stirring occasionally.
  • Stir in the cornstarch mixture and cook for another 1–2 minutes, or until the glaze thickens.
  • Remove from heat and let the glaze cool to room temperature.

Assemble and Garnish:

  • Drizzle the cooled strawberry glaze over the cake, spreading it evenly.
  • Top with fresh strawberries and an optional drizzle of melted white chocolate for an elegant finish.

Notes

  1. Fresh or Frozen Strawberries: If fresh strawberries aren’t available, frozen strawberries work just as well. Just thaw them and mash before using.
  2. Zesty Flavor Boost: Add a little extra lemon zest to the glaze for a tangier kick.
  3. Glaze Texture: If you prefer a smoother glaze, strain the mashed strawberries before cooking.
  4. Chocolate Twist: Add white chocolate chips to the batter for bursts of sweetness.
  5. Pan Size: This recipe works well in a round springform pan for a more elevated presentation—just adjust the baking time slightly.
