18 oz container whipped topping (like Cool Whip), thawed
16 oz package strawberry gelatin
2cupsboiling water
3cupsfresh strawberriessliced
Instructions
Step 1: Prepare the Pretzel Crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix the crushed pretzels, melted butter, and 3 tablespoons of sugar until well combined. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even layer.
Bake for 10 minutes. Remove from oven and allow to cool completely.
Tip: Press the crust down firmly with the bottom of a measuring cup for a solid base.
Step 2: Make the Cream Cheese Layer
In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar until smooth and creamy. Gently fold in the whipped topping until fully incorporated and fluffy.
Spread this mixture evenly over the cooled crust, making sure to seal the edges to prevent the gelatin layer from seeping through. Chill in the refrigerator while preparing the top layer.
Tip: Let the cream cheese come to room temperature for smoother blending.
Step 3: Prepare the Strawberry Gelatin Layer
In a separate bowl, dissolve the strawberry gelatin in 2 cups of boiling water. Stir for about 2 minutes until completely dissolved. Let the gelatin cool for about 15 minutes, then stir in the sliced strawberries.
Once the gelatin has slightly thickened but is still pourable, gently pour it over the cream cheese layer. Refrigerate the assembled dessert for at least 4 hours or until fully set.
Tip: Don’t rush the gelatin cooling process—too hot and it will melt the cream cheese layer.
Step 4: Slice and Serve
Once fully set, slice the dessert into squares and serve chilled. Each bite delivers a little salty crunch, creamy sweetness, and fresh berry flavor.
Optional Garnish: Top with a dollop of whipped cream and an extra strawberry slice.
Notes
Crush the Pretzels Fine: A food processor or a sealed bag and rolling pin work great.
Whipped Topping Substitute: Use homemade whipped cream if preferred (beat 1 cup heavy cream with 2 tablespoon sugar until stiff).
Gelatin Alternatives: Raspberry gelatin with raspberries or peach gelatin with peaches are fun twists.
Make It Lighter: Use reduced-fat cream cheese and light whipped topping.
Press Layers Firmly: A tight crust and smooth cream cheese layer ensure clean cuts and no leaks.
