Ingredients

For the Noodles:

  • 8 oz udon noodles: These thick and chewy noodles absorb the flavors beautifully making them ideal for this dish.

For the Beef and Sauce:

  • ½ lb ground beef: Provides a hearty and savory base.
  • 2 tablespoon sweet chili sauce: Adds a balance of sweetness and heat.
  • 1 tablespoon soy sauce: Enhances the umami flavor.
  • ¼ cup diced bell peppers: Adds a burst of color and crunch.

Instructions

  • Prepare the Noodles
  • Start by cooking the udon noodles according to the package instructions. Most udon noodles cook in boiling water in just a few minutes. Once done, drain the noodles, rinse them under cold water to stop the cooking process, and set them aside.
  • Cook the Beef and Bell Peppers
  • Heat a skillet or wok over medium-high heat. Add the ground beef and cook until it begins to brown, breaking it apart with a spoon or spatula. Once the beef is halfway cooked, add the diced bell peppers. Cook for another 2-3 minutes, allowing the peppers to soften slightly while retaining their crunch.
  • Add the Sauce
  • Lower the heat to medium and stir in the sweet chili sauce and soy sauce. Mix thoroughly, ensuring the beef and peppers are evenly coated with the glaze.
  • Combine with Noodles
  • Add the cooked udon noodles to the skillet. Toss everything together until the noodles are fully coated in the sauce and heated through. This step ensures the flavors meld perfectly.
  • Serve Warm
  • Transfer the noodles to a serving plate or bowl. For a finishing touch, garnish with chopped cilantro for added freshness and aroma.

Notes

Enhance the Flavor

  • Add a teaspoon of sesame oil to the sauce for a nutty aroma.
  • Sprinkle crushed red pepper flakes for an extra spicy kick.

Customize the Veggies

  • Incorporate vegetables like shredded carrots, snap peas, or broccoli for added nutrition and color.
  • Substitute bell peppers with your favorite vegetables like zucchini or mushrooms.

Adjust the Protein

  • Swap ground beef with ground chicken, turkey, or even tofu for a lighter or vegetarian-friendly version.
